As many of you know, 2024 for me started in warmer climes with blue sky and sunshine, and all my family reunited for a very special two weeks. It was the perfect reason, and perfect place to really switch off and recharge the batteries.
Emily is now back in Australia (saying goodbye was really hard), and the rest of us have been back here for a week, and each day I seem to be putting on more and more clothes to try and keep warm. It's definitely weather for cosying up and eating wholesome food. This White Bean One Pot Wonder which I made this week really hit the spot.
WARMING AND WHOLESOME AND PERFECT FOR NOW .....
As always with my recipes this one is very simple. Essentially it is a combination of beans, tomato, onion and garlic, but it really is a 'Susie classic' in that you can honestly chuck in anything you want - I added some kale and spinach, and having just had a new delivery I added half a jar of Chorizo Jam too - before popping in the oven top with slices of mozzarella, then sprinkle with chilli flakes and finish with a little drizzle of honey and some grated parmesan to serve - the result a quick and very tasty supper.
