400G RIPE CHERRY TOMATOES, HANDFUL FRESH HERBS (BASIL, PARSLEY, MINT), 4 SPRING ONIONS, FINO EV OLIVE OIL, FINO WHITE BALSAMIC (YOU COULD USE FINO DARK BALSAMIC OR FINO ARROPE IF YOU PREFER), SALT AND PEPPER
CHOP UP THE TOMATOES IN TO BITE SIZED PIECES AND PLACE IN A BOWL. FINELY CHOP UP ALL THE HERBS AND ADD TO THE TOMATOES, THEN DO THE SAME WITH THE SPRING ONIONS. I NEVER ACTUALLY MAKE A DRESSING AS SUCH - I JUST POUR A GLUG OF OLIVE OIL AND A GLUG OF WHITE BALSAMIC ON TO THE TOMATOES AND GIVE IT ALL A STIR AROUND THEN SEASON WITH ROCK SALT AND FRESHLY GROUND BLACK PEPPER - SO SIMPLE AND UTTERLY DELICIOUS - GREAT AS A SIDE SALAD, OR FAB AS AN EASY LUNCH WITH SOME WARM BREAD
