These make the most moreish snack - you will have to exercise self control not to munch them all at once!

Seeds of a pumpkin, Fino Olive Oil, rock salt

Scoop the seeds out of the centre of the pumpkin and separate them from any flesh. Place in an oven proof dish, drizzle with Fino Olive Oil and season with rock salt. Place in a hot oven (180C) for about 20 mins - I actually left mine in for sightly longer but they were fine - you want them to be browned and crunchy - try to wait for them to cool before scoffing!!

As well as being a healthy snack they would also be fantastic sprinkled on top of salads or soups.
