I am finding this a rather strange “in between” time – spring is definitely here, and although we have been so lucky to have some lovely sunshine it’s still jolly cold a lot of the time - we aren’t in lockdown but equally we aren’t able to do the things we used to think of as “normal” - people are making plans but with no great certainty, they are just having to go for it and hope for the best – it definitely all still feels a bit unsure and that’s certainly making me feel rather out of sorts! All we can do is take one day at a time, and enjoy the things that we are able to do, keeping fingers crossed that all continues in a positive direction. Nature is a brilliant reminder for all of us that things keep going whatever and I am so grateful for the beautiful outdoors, and for time spent in the fresh air with my doggies. Billie is rather happy snuggled up at home!
I am rather excited that I have been called up for Jury Service starting in a weeks time - I am sure will be incredibly interesting although I am a little bit apprehensive. It will also mean that life will be slightly more of a juggling act than normal - as a small business owner life is always a juggling act, well I think it is for most people, but please do bear with me for a couple of weeks therefore if orders don’t go out on the same day. Anyone who knows Rupert knows very well that he is addicted to chilli, and he is also addicted to snacking before supper! I may well have told you this before but in his opinion a mix of Fino Chilli Oil, Fino Arrope and rock salt with warm bread for dunking is the ultimate snack. A LITTLE RECIPE INSPIRATION ....
Some food just oozes comfort - this Pea, Spinach and Asparagus Risotto does exactly that for me and it’s just what I feel like having now. Perfect timing as the asparagus season has just begun so this recipe has an appropriately spring like feel but it is also nice and warming for a chilly evening. Hope you enjoy it too. By the way, it is extremely good with a spoonful of Fino Chorizo Jam!
