The snowdrops are in full bloom and they are so beautiful, but even better than that they are a sign that spring is on the way! At the end of next week Rupert and I are heading off on holiday to warmer climes and I do feel very lucky – this winter seems to have dragged on and the thought of some sunshine is so appealing - by the time we get back it will only be a couple of weeks until the clocks change and what a difference those longer days make. Something to really look forward to.
Maybe it’s something to do with the winter being so long but I seem to have been waiting for a delivery of olive oil for an age! This morning I have finally been told that it has arrived in the UK, and it will be arriving with me on Monday. Of course I am delighted it is here, but I am less excited by the thought of unloading 2000 litres of olive oil! That bit of my job doesn’t get any easier, quite the opposite, so perhaps I will deserve a holiday after that!! I know a number of you are waiting for orders to be sent out, and I promise I will get them off to you the minute the tins are with me.
TWO SIMPLE RECIPES ...
Comfort food is always a good option and this Leek, Bacon and Blue Cheese Tart certainly fits the bill and is easy to fling together. I made it for supper last night and it was really good. The key is using ready rolled puff pastry - with that it takes no time at all. It is very adaptable too – you can honestly add whatever you happen to have in the fridge – I could have added chorizo instead of the bacon, and mushrooms or peppers would be good veggie versions. Other types of cheese work just as well too – goats cheese is a really good one. It’s definitely worth having a pack of ready rolled puff pastry in the fridge which always gives you a very quick and simple option when you are stuck for inspiration.
This week I also made Pea & Mint Soup for the first time in ages – wow, I had forgotten just how good it is, and the ingredients are generally things that most people would have in their kitchen (everyone has a bag of frozen peas don’t they?). In my opinion it's quick, easy, inexpensive, warming and delicious. I made extra so my freezer is now well stocked too!
