BROCCOLI AND CAULIFLOWER GALETTE WITH LEEKS AND RICOTTA

Serves 4-6 depending on how greedy you are! 1 sheet ready rolled puff pastry, EV olive oil, 1 large leek thinly sliced, 1 clove garlic, 1 tsp thyme, 200g ricotta, 400g broccoli florets, 400g cauliflower florets, 100g grated cheddar, 1 egg, salt and freshly ground pepper - Serves 4-6 depending on how greedy you are!
