1 RED CABBAGE, 1 LARGE OR 2 MEDIUM COOKING APPLES, 6 TBSPS WATER, 40G SUGAR, SALT, 4 TBSPS FINO WHITE BALSAMIC, 1 TBSP FINO CHILLI JAM
REMOVE THE OUTER LEAVES FROM THE CABBAGE AND DISCARD, AND FINELY CHOP THE REST. PEEL, CORE AND SLICE THE APPLES INTO SMALL CHUNKS. PLACE THE CABBAGE AND APPLE IN A PAN WITH THE WATER, SUGAR AND SALT AND BRING TO THE BOIL. COVER AND PLACE IN A LOW OVEN (ABOUT 100C) FOR AN HOUR. REMOVE FROM THE OVEN AND ADD THE WHITE BALSAMIC, BUTTER AND CHILLI JAM AND STIR. DELICIOUS!
