THIS VERSION OF CLASSIC SPANISH GAZPACHO IS COMPLETELY FAIL SAFE AND HONESTLY TAKES LESS THAN 10 MINUTES

8 RIPE TOMATOES (USE VINE RIPENED IF POSSIBLE), 2 RED PEPPERS, 1/2 CUCUMBER, 4 SPRING ONIONS, 1 CLOVE GARLIC, 60ML EV OLIVE OIL, SPLASH OF WHITE BALSAMIC, PINCH OR TWO OF SALT

CHOP THE TOMATOES INTO CHUNKS REMOVING THE CORE (NO NEED TO DE-SKIN THEM). HALVE AND DE-SEED PEPPERS, AND CUT THEM, AND ALSO THE CUCUMBER INTO CHUNKS. PEEL THE GARLIC. CHOP SPRING ONIONS. PUT EVERYTHING IN THE WHIZZER AND BLEND AT HIGH SPEED UNTIL IT IS PUREED. TURN THE SPEED DOWN AND ADD THE SALT AND WHITE BALSAMIC, AND THEN THE OLIVE OIL. CHILL IN THE FRIDGE BEFORE SERVING ALTHOUGH YOU CAN ALWAYS ADD SOME ICE CUBES IF YOU NEED IT IN A HURRY.
