THESE SWEET POTATO CHOCOLATE BROWNIES ARE VEGAN AND GLUTEN FREE BUT SO GOOEY AND DELICIOUS - YOU CAN ALMOST THINK OF THEM AS HEALTHY!
180G MASHED SWEET POTATO, 80G ALMOND BUTTER (OR PEANUT BUTTER), 4 TBSP MAPLE SYRUP, 30G COCOA POWDER - I ALSO ADDED 2 TSP VANILLA ESSENCE AND A BIG PINCH OF ROCK SALT
BAKE THE SWEET POTATO IN IT'S SKIN UNTIL SOFT - ALLOW TO COOL THEN PEEL OFF THE SKIN AND MASH. COMBINE THE SWEET POTATO, NUT BUTTER, MAPLE SYRUP AND COCOA POWDER IN A BOWL (PLUS VANILLA ESSENCE AND SALT IF YOU CHOSE) AND STIR INTO A SMOOTH BATTER. TRANSFER TO A BAKING TRAY AND SPREAD EVENLY. BAKE IN THE OVEN AT 180C FOR 25/30 MINS OR UNTIL THE CENTRE IS COOKED (I ACTUALLY COOKED THEM FOR SLIGHTLY LONGER). ALLOW TO COOL AND THEN ENJOY!
