When you are buying fruit and veg from the farmers market or a greengrocer one of the joys is you get the whole thing, leaves and all - it's for exactly that reason that I made this delicious warming soup - waste not want not.

Celery leaves (a large bunch), 1 white onion, 1 clove garlic, olive oil, 1 large potato, 1 litre veg stock, salt and pepper, cream to serve

Place a large heavy based pan on a gentle heat and add a glug of olive oil. Then add the chopped celery leaves, onion and garlic and sauté for 5 mins. Peel and cube the potato and add in to the pan along with the stock and salt and pepper. Bring to the boil and simmer until everything is tender (10/15 mins). Whizz until smooth . Serve with a splash of cream.
