It is already the end of January – I don’t want to wish time away but it does mean we have got through another month of lockdown! For so many it continues to be unbelieveably challenging, and often it seems hard to see any light at the end of the tunnel. However, amidst all the uncertainty one thing we do have is the comfort of knowing that we are heading out of winter, spring is on it’s way, and days are definitely getting longer. I know it is incredibly muddy and wet everywhere but I am so grateful that I have my doggies giving me a reason to have to get out into the fresh air every day - nature is so restorative and serves as a reminder that life goes on. When I saw these tiny snowdrops peeking out behind this rather wild curtain of twigs it felt rather symbolic – a sign of new life beyond the confusion we are in right now. 

I know I am not alone when my thoughts wander to sunnier climes - I have been spoilt in previous years often heading for some winter sun, but not this year.  I have however just had to renew my passport and my new dark blue one arrived this week - it reminds me of when I was young so I quite like it, but what I am not so keen on are all the new customs regulations that I am now having to negotiate in organizing my next shipment of olive oil and balsamic!  I am on a seriously steep learning curve - hopefully things will fall in to place and I’m sure the next time it will be easier. For now please keep your fingers crossed that I manage to get some stock over here before too long – if you want to grab some while I have it why not take advantage of 10% off olive oil and jams this weekend by adding FINGERSCROSSED at the checkout (does not include multiples of tins.)

A SIMPLE SPANISH DISH....

Whilst there have been more of us at home, and everyone with different agendas, I have had to have quick and simple recipes up my sleeve - this recipe for Chorizo with Red Peppers and Butter Beans caught my eye so I gave it a try - it is particularly Spanish, it's colourful, and it's made from ingredients which I would normally have in the cupboard anyway - perfect! I recommend giving it a go.
