I know many people dread the evenings drawing in and the days becoming shorter – I can empathise to some degree, but on a late September day as beautiful as today has been here in Oxford it’s hard not to love this time of year – a cloudless blue sky, sun on your face, apples hanging off the trees, hedges of plump blue sloes waiting to be picked and doused in gin and perfect shiny conkers underfoot, but the prospect of a cooler evening where you can draw the curtains and snug up on the sofa with a delicious bowl of homemade soup for supper – heaven!
AUTUMN IN A BOWL
This Roasted Squash and Apple Soup (recipe from The Medicinal Chef) literally does feel like the joy of autumn in a bowl – I absolutely love squash in any shape or form, and being lucky enough to have apples on a tree right outside the kitchen door makes it a particularly easy and rather satisfying meal to make. I am literally about to tuck in to this bowl right now.
It has been a madly busy week, and a really fun weekend with friends staying which was a perfect excuse to show them, and remind myself, of just how beautiful Oxford is. It was so inspirational wandering round some of the colleges and their beautiful gardens, and I kept thinking how incredible it must be to study in such beautiful surroundings. If only I had worked quite a lot harder!
