GLUG OF OLIVE OIL, 20G BUTTER, 1 ONION CHOPPED, 2 MEDIUM LEEKS CHOPPED, 2 LARGE POTATOES DICED, 1 GARLIC CLOVE CHOPPED, THYME, 500ML VEGETABLE STOCK, SALT AND PEPPER
MELT THE BUTTER WITH THE OLIVE OIL OVER A MEDIUM HEAT AND ADD THE LEEKS, ONION AND POTATOES - SEASON - COOK GENTLY FOR 15-20 MINS - STIR EVERY NOW AND THEN TO MAKE THE VEG DOES NOT CATCH ON THE BOTTOM OF THE PAN. ADD THE GARLIC AND THYME AND COOK FOR A FURTHER MINUTE. THEN ADD THE STOCK, BRING TO THE BOIL AND THEN TURN DOWN THE HEAT AND SIMMER FOR 15 MINS.
