1 MEDIUM BUTTERNUT SQUASH, 2 APPLES, 2 CARROTS, 1 RED ONION, 2 CLOVES GARLIC, 2 TBSPS OLIVE OIL, 1 TSP GROUND CINNAMON, 1/2 TSP GROUND NUTMEG, 750ML VEGETABLE STOCK, 200ML UNSWEETENED APPLE JUICE, SALT AND BLACK PEPPER TO TASTE, GREEK YOGURT HANDFUL PUMPKIN SEEDS TO SERVE
CHOP THE SQUASH, APPLES, CARROTS AND ONION INTO CHUNKS AND SPREAD OUT ON A LARGE BAKING TRAY ALONG WITH THE GARLIC CLOVES (SKIN ON). DRIZZLE WITH OLIVE OIL, SPRINKLE OVER CINNAMON AND NUTMEG, THEN TOSS EVERYTHING TOGETHER UNTIL WELL COATED. ROAST FOR 30-35 MINS UNTIL THE SQUASH IS GOLDEN AND TENDER AND THE APPLES ARE SLIGHTLY CARAMELISED. SQUEEZE THE GARLIC FROM ITS SKIN AND TRANSFER ALL THE ROASTED INGREDIENTS INTO A LARGE SAUCEPAN. ADD THE STOCK AND APPLE JUICE, BRING TO THE BOIL THEN REDUCE THE HEAT AND SIMMER FOR 10 MINS. BLEND WITH A STICK BLENDER, SEASON TO TASTE AND SERVE WITH A SPOON OF GREEK YOGURT AND A SCATTERING OF TOASTED PUMPKIN SEEDS FOR CRUNCH.
