PLACE THE CUBED BUTTERNUT SQUASH ONTO A BAKING TRAY - DRIZZLE WITH OLIVE OIL TO COAT, SPRINKLE THE CINAMMON AND CUMIN ON TOP AND MIX WELL - PLACE IN THE OVEN TO ROAST AT 180C FOR 20 MINS.

WHILE THE SQUASH IS COOKING CHOP UP THE RED ONION, GARLIC AND GINGER - PLACE A PAN OVER A MEDIUM HEAT AND ADD A DRIZZLE OF OLIVE OIL FOLLOWED BY THE ONION AND GARLIC - SAUTÉ FOR 5 MINS UNTIL SOFT. THEN ADD THE GINGER, TURMERIC AND CURRY POWDER - STIR WELL, THEN ADD THE LENTILS AND THE COCONUT MILK. BRING TO THE BOIL AND ALLOW TO SIMMER FOR ABOUT 15-20 MINS. IF NEEDED ADD A SPLASH OF WATER. ONCE THE LENTILS ARE SOFT ADD IN THE FRESH SPINACH STIRRING IT THROUGH THE LENTIL MIXTURE SO IT WILTS, THEN FINALLY ADD THE LIME JUICE AND THE COOKED BUTTERNUT SQUASH. SERVE TOPPED WITH FRESH RED CHILLIES TO TASTE!
