THIS IS ONE OF MY ABSOLUTE FAVOURITE BREAKFASTS - TYPICALLY SPANISH, AND PARTICULARLY GOOD EATEN SITTING IN A CAFE IN THE CENTRE OF MALAGA JUST WATCHING THE WORLD GO BY!

2 LARGE RIPE TOMATOES (BEEFSTEAK TOMATOES ARE GREAT), SALT, YUMMY BREAD AND 2 CLOVES GARLIC

CUT THE TOMATOES IN HALF HORIZONTALLY. USING A GRATER (A BOX GRATER IS IDEAL) RUB THE CUT FACES OF THE TOMATO OVER THE LARGEST HOLES OF THE GRATER USING THE PALM OF YOUR HAND TO SLIDE IT UP AND DOWN. YOU WANT THE FLESH OF THE TOMATO TO BE GRATED LEAVING JUST THE SKIN. SEASON THE TOMATO PULP TO TASTE.

SLICE THE BREAD AND BRUSH WITH OLIVE OIL. PLACE IN THE OVEN FOR 5 MINS TO CRISP UP SLIGHTLY, THEN REMOVE AND RUB BREAD WITH THE SPLIT GARLIC CLOVES. SPOON ON THE TOMATO MIXTURE, DRIZZLE WITH MORE OLIVE OIL, AND SPRINKLE WITH ROCK SALT AND GROUND BLACK PEPPER.
