REMOVE PUFF PASTRY FROM THE FRIDGE AND ALLOW TO SIT FOR 20 MINS. UNROLL THE PASTRY AND PLACE ON A BAKING TRAY - SCORE A LINE (NOT CUTTING ALL THE WAY THROUGH) ABOUT 1CM FROM THE EDGE - SLICE THE LEEKS INTO ROUNDS AND FINELY CHOP THE GARLIC - ADD A GLUG OF OLIVE OIL INTO A PAN, ADD THE LEEKS AND GARLIC AND SAUTEE FOR 5 MINS UNTIL SLIGHTLY BROWNED. SEASON THEN PLACE THE VEGGIE MIXTURE ONTO THE PASTRY, SPREADING OUT UP TO THE SCORE LINE. MEANWHILE CHOP THE BACON INTO STRIPS, FRY FOR A COUPLE OF MINS BEFORE ADDING ON TOP OF THE VEGGIE MIXTURE. FINISH BY CRUMBLING THE BLUE CHEESE ON TOP BEFORE PLACING IN TO AN OVEN AT 180C FOR ABOUT 15 MINS - WHEN COOKED THE CHEESE WILL BE MELTED AND THE EDGES OF THE PASTRY COLOURED AND RISEN.
IT IS DELICIOUS SERVED WARM WITH SALAD, BUT IT'S VERY GOOD COLD THE FOLLOWING DAY TOO.
