THIS SPANISH INSPIRED RECIPE IS MADE FROM SIMPLE INGREDIENTS WHICH I NORMALLY HAVE IN THE CUPBOARD - IT LITERALLY TAKES 20 MINS TO MAKE - SERVES 2/3
1 ONION DICED, 1 RED PEPPER DE-SEEDED AND SLICED, 2 GARLIC CLOVES CHOPPED, 150G COOKING CHORIZO SLICED, 400GS BUTTER BEANS, 400G TIN CHOPPED TOMATOES, OLIVE OIL, 1 TBSP DARK BALSAMIC, SALT AND PEPPER - PARSLEY TO SERVE
POUR A GLUG OF OLIVE OIL INTO A LARGE PAN, ADD THE ONIONS AND RED PEPPER AND FRY UNTIL THEY SOFTEN. THEN ADD THE GARLIC AND CHORIZO AND COOK FOR A FURTHER 5 MINS, OR UNTIL THE RED JUICES FROM THE CHORIZO ARE COVERING THE PAN. ADD THE BEANS AND STIR THEM AROUND TO GIVE THEM A GOOD COATING OF THE OIL. FINALLY ADD THE TOMATOES AND THE DARK BALSAMIC, AND SEASON. SIMMER FOR A FURTHER 10 MINS THEN SERVE WITH A SPRINKLING OF PARSLEY, A DRIZZLE OF OLIVE OIL AND A GOOD HUNK OF WARM BREAD.
