Spring Sunshine and New Single Estate Olive Oil - March 2017
This weather is incredible - Spring has arrived, and it feels fantastic. Leaves are emerging, the trees are heavy with blossom, and little primroses are nestled in the undergrowth. It is such a heavenly time of year.
With the warmer weather here it seems appropriate that I have just taken delivery of Jose Maria’s single estate olive oil - produced from the hojiblanca olives grown on his finca near Casarabonela, it is deliciously "green" in flavour with a peppery kick - perfect for drizzling on salads, or for dipping with bread and Fino balsamic. Since January we have had a house full of builders. We are so lucky because they are fantastic but it has been, and still is, chaos. It will be worth it I know, and our new kitchen is so close to being finished. Very spoilingly we have put in an Aga which, having not had one for 15 years, is heaven – I am so happy, and my little doggies, Fizzy and Billie, are unbelieveably happy too!
With an Aga what could be easier than oven roasted veggies which have always been a favourite of mine - of course it's possible to cook them in any oven as I have done for years, but with the Aga it is so simple - I just love the colours of these beetroot and sweet potatoes - roast with a little olive oil, and salt and pepper and supper's pretty much sorted.
