Working for oneself certainly has it’s benefits, not least having the freedom to take decisions to do what you want when you want – basically to be spontaneous. Eliza (my youngest) is a teacher so had half term a couple of weeks ago – on the Monday evening whilst having supper, and with the promise of good weather, we literally took a split second decision to head down to Cornwall – we luckily found a BnB where we could stay for a couple of nights, and at 6am on Tuesday we were on the road to St Mawes, a place which is very special to us – we had such happy family holidays there when the children were young. We had a brilliant couple of days, probs would have been whatever, but there’s something even more special when it’s spontaneous.
Ever since then we seem to have had a run of sunshine, admittedly with the odd monumental downpour – my poor mum got badly flooded in Shropshire on Monday night as a result of flash flooding although thankfully all is well, but we certainly can’t ignore the changes that are happening around us. Perhaps it’s all the more reason to take opportunities when one is presented with them and not put them off.
SPONTANEOUS AND SIMPLE SUSTENANCE ....
I don’t know about you but when the sun’s shining we are much more inclined to make a last minute plan to see friends, and then need to produce something very simple at the last minute. SILKY SMOOTH HOUMOUS is my absolute go to - only four ingredients necessary, and in our house (maybe yours too) they are staples so that makes it super easy. This delicious GRILLED COURGETTE AND RICOTTA SALAD WITH CRUSHED HAZELNUTS AND HONEY is inspired by fab private chef Georgia Hearn - I love everything she does and this is no exception. I also believe you can't beat good old TOMATO MOZZARELLA AND BASIL SALAD (in this case I have used Basil Oil). Of course the common denominator in all of these is Extra Virgin Olive Oil - who can live without it? If you need to stock up on Olive Oil (or anything else Fino) then get 10% off this weekend (excluding multiples of tins) using code SPONTANEOUS.
Heads up too that from Monday 19th June for two weeks I, along with lots of other amazing independent brands, am taking part in the fabulous OCF SUMMER COLLECTION – so if you want to find something uniquely special, and at the same time support a small business (and make someone very happy) then do head to the OCF website. Many of the businesses have special offers for the duration, and there is just one discount code to use across all – OCFSUMMER.
Just one more thing! I am going to be away from 1st -15th July so if you are needing anything before mid July then do think about getting your order in sooner rather than later.
Have fun and enjoy this wonderful sunshine.
