CHOP THE ONION, GARLIC AND MUSHROOMS - SAUTE THE ONION AND GARLIC IN A LITTLE OLIVE OIL OVER A GENTLE HEAT, THEN ADD THE CHOPPED MUSHROOMS. COOK FOR 5 MINS THEN ADD THE VEGETABLE STOCK, JUST ENOUGH SO THAT THE VEGGIES ARE COVERED - SIMMER FOR A COUPLE MORE MINS THEN ADD THE SOY SAUCE AND THE MILK (YOU COULD USE CREAM) - WHIZZ UNTIL SMOOTHISH THEN TASTE AND SEASON. SERVE WITH A DRIZZLE OF CREAM AND OLIVE OIL ON THE TOP.
