EXTREMELY QUICK AND DELICIOUSLY GOOEY OLIVE OIL AND SEA SALT CHOCOLATE BROWNIES

  2 eggs, 230g dark brown sugar, 125ml extra virgin olive oil (Fino of course), 1 tsp vanilla extract, 110g SR flour, 90g cocoa powder, 1 tsp coarse sea salt, 100g chocolate roughly chopped Heat the oven to 180C. Whisk egg, sugar, olive oil and vanilla extract in a bowl, then add flour, cocoa and salt and stir until smooth. Then add the chocolate bits (if you prefer you could use something different here like nuts, or stem ginger). Pour mixture in to a greased baking tray and bake for 10 mins. Ben made this for us for lunch today .... lucky us! Makes 10-12 falafels  1 can chickpeas, drained and patted dry, good sized bunch of parsley and coriander (a full handful when chopped up), 4 garlic cloves, 2  shallots or 1/2 white onion, 2 tbsps sesame seeds, 1 1/2 tsps cumin seeds, salt and pepper, 3-4 tbsps plain flour Firstly drain chickpeas and pat dry. Place chickpeas, shallots, parsley, coriander, sesame seeds, cumin and salt and pepper into blender and blitz until you have a roughish mixture - be careful not to blitz so much that you make a paste. Serves 4-6 depending on how greedy you are! 1 sheet ready rolled puff pastry, EV olive oil, 1 large leek thinly sliced, 1 clove garlic, 1 tsp thyme, 200g ricotta, 400g broccoli florets, 400g cauliflower florets, 100g grated cheddar, 1 egg, salt and freshly ground pepper - Serves 4-6 depending on how greedy you are! SWEDE AND CELERIAC SOUP

1 Swede,1 Celeriac, 200ml Double Cream,150g Salted Butter, 300ml Vegetable Stock, Salt and Pepper to taste, Sage Leaves for decoration (optional) Cut the swede and celeriac into small cubes and place in a pan of salted cold water, making sure they are fully covered. Bring to the boil and simmer for 20 minutes. After 20 minutes drain the vegetables and allow to cool for 15 minutes. Once cooled transfer to a food processor and add cream and butter. Blend the mixture in the food processor until smooth.
