Moroccan Lamb 250g good diced lamb steak, 1 red onion chopped, 1 inch piece fresh ginger chopped, 1 clove garlic chopped, 1 sweet potato peeled and cubed, carton chopped tomatoes, 500ml chicken stock, dash of Fino Dark Balsamic or Fino Arrope, fresh chilli (as much as you like), 1 heaped tsp cumin seeds, shake of cayenne pepper, 2 tbsps pomegranate seeds, fresh coriander for garnish, tbsp plain yogurt Fry the onion, garlic and ginger with a drizzle of olive oil over a gentle heat for 5 mins – then add the diced lamb and cook until browned.  Add the chilli, cumin and cayenne to the browned meat...

OVEN BAKED COD WITH KALE BLUEBERRY AND QUINOA SALAD

2 cod fillets, 1 chopped fresh chilli, 1tsp chopped ginger, 100g quinoa, small handful blueberries, 100g chopped kale, zest and juice of 1/2 orange, olive oil, salt, pepper Place each cod fillet in a foil parcel and drizzle with a glug of olive oil - add chopped chilli and ginger, and season - seal each parcel and place on a baking tray.  Bake for 15 mins at 180C.  Meanwhile cook the quinoa as per the instructions on pack, and at the same time steam the chopped kale.  Once cooked combine the quinoa and kale, and dress with olive oil and the juice of...

  SERVES 6 3 cloves garlic chopped, 12 pitted prunes halved, 18 pitted green olives, 2 tbsp capers with juice, 2 tbsp olive oil, 2 tbsp red wine vinegar, 2 bay leaves, 1 tbsp dried oregano, salt, pepper, 12 chicken thighs (skin on), 55g brown sugar, 10 fl oz white wine, chopped parsley Combine garlic, prunes, olives, capers, olive oil, vinegar, bay leaves, oregano, salt and pepper to make a marinade. SPANISH MEMBRILLO (QUINCE CHEESE)

1lbs quinces washed peeled cored and chopped – vanilla paste – caster sugar. Place the quince pieces into a large pan and add enough water to cover. Add the vanilla and bring to the boil. Boil for 30-40 minutes, or until quinces are very soft. Drain the liquid and then weigh the cooked quinces. This weight is the weight of caster sugar you require. CRISPY KALE CHIPS

CRISPY KALE CHIPS

Kale is healthy so I am sure these must be healthy. For a home made version of crisps simply put a single layer of chopped kale on a baking tray and drizzle with delicious olive oil and sprinkle with rock salt.  For a slight “lift” squeeze on the juice of half a lemon, or for a spicy version use Fino chilli oil.  Oven bake for about 10 mins at 180C but do keep an eye on it so it doesn’t burn.  Very moreish!
