Moroccan Lamb 250g good diced lamb steak, 1 red onion chopped, 1 inch piece fresh ginger chopped, 1 clove garlic chopped, 1 sweet potato peeled and cubed, carton chopped tomatoes, 500ml chicken stock, dash of Fino Dark Balsamic or Fino Arrope, fresh chilli (as much as you like), 1 heaped tsp cumin seeds, shake of cayenne pepper, 2 tbsps pomegranate seeds, fresh coriander for garnish, tbsp plain yogurt Fry the onion, garlic and ginger with a drizzle of olive oil over a gentle heat for 5 mins – then add the diced lamb and cook until browned.  Add the chilli, cumin and cayenne to the browned meat...

Kale Chips

Kale Chips

Kale is healthy so I am sure these must be healthy. For a home made version of crisps simply put a single layer of chopped kale on a baking tray and drizzle with delicious olive oil and sprinkle with rock salt.  For a slight “lift” squeeze on the juice of half a lemon, or for a spicy version use Fino chilli oil.  Oven bake for about 10 mins at 180C but do keep an eye on it so it doesn’t burn.  Very moreish!

Kale and Red Onion Dahl – for 1

1tsp extra virgin olive oil, 1 tsp mustard seeds, 40g red onion chopped, 1 garlic clove chopped, 1 tsp finely chopped ginger, 1 birds eye chilli chopped, 1 tsp curry powder, 2tsp ground turmeric, 300ml veg stock, 40g red lentils, 50g chopped kale, 50ml coconut milk Heat olive oil over gentle heat and add mustard seeds. As mustard seeds start to pop add onion, garlic, chilli and ginger and cook until soft. Add curry powder and turmeric, cook for a minute, then add stock and bring to the boil. I am quite certain lots of you have already discovered it but for those of you who haven’t courgetti is so easy, and very inexpensive – all you need is a courgette which you turn into “etti” either using some sort of “etti” machine like a spiralizer, or if all else fails just do it yourself by slicing really thinly lengthwise (or you can buy it ready done in a supermarket!) When you have the raw courgetti you can either steam for literally a minute or, even better in my opinion, sauté with Fino Olive Oil in a frying pan...
