300g fresh cranberries (or you can use frozen), 300ml water, 300g sugar, slices of orange zest, 200ml freshly squeezed orange juice (approx 2 oranges), large chunk ginger sliced

Place all the ingredients in a pan and warm over a medium heat, stirring to ensure the sugar dissolves. As the mixture comes to the boil you'll start to hear the cranberries bursting. To make sure they have all popped use a spoon to press them against the side of the pan to release the flavours. Boil for 3 or 4 mins, then remove from the heat and allow to sit for about an hour so the flavours really infuse before straining into a bottle. Use as a mixer (hot or cold) with still or sparkling water, or whatever your tipple of choice is. Yummy! Keeps in the fridge for a couple of weeks.

Top Tip - the leftover cranberry mixture is absolutely delicious too - just remove the ginger pieces and the orange zest and it's just like cranberry sauce!
